FFwD: garlicky crumb-coated broccoli

I’m so excited to be back and cooking with my friends at FFwD! Here is my garlicky broccoli. We really enjoyed this recipe and will make it again!!

I started with the star of the show – broccoli, and added a cast of supporting characters including butter (always a favorite), garlic, mint, parsley, orange zest (I was out of lemons), bread crumbs, and salt and pepper.

I washed and cut up the broccoli into largish pieces and then loaded up the steamer.

Meanwhile I cut up the parsley and mint and zested my orange.

I melted the butter in a skillet over medium heat and then added my chopped garlic to soften. A little salt and pepper was added.

By now the broccoli was steamed so I used a pair of tongs to transfer it to a paper towel lined plate to dry.

I added the breadcrumbs and the herbs to the butter/garlic mixture and let it toast over medium high heat for a few minutes.

The last step was to dredge the broccoli tops in the breadcrumbs. I found using my hands to swirl the tops around the pan worked best.

I did have about a quarter cup of extra crumbs so I followed Dorie’s suggestion and sprinkled them on top.

This was a great side dish. It is always nice to find another way to serve veggies.

Also as a side note: I served the leftovers two nights later and this was still really good. I put the broccoli in a glass dish and covered it with foil, but it in the oven at 350 for about 20 minutes and then took off the foil for about 5  minutes. It turned out great and not soggy!

  2. You did a great job getting your crumbs to stick to the broccoli. Good idea on the reheat method – I just put my leftovers in the microwave and it turned out a little soggy, but still yummy.

  4. Oooh, your broccoli looks fantastic! I also used both parsley and mint, with lime. If only that smell could be bottled up!

  7. Your process photos are lovely. I actually omitted the lemon because I was running so behind this week and Nana told me that made a huge difference. I was eyeing an orange I had on hand so chuckled when I saw your top photo 🙂 Nana and I both really loved this recipe- no issue in dealing with reheating since there were no leftovers 🙂 Great post !
